Galinhada
A beautiful sprawling one-pot dish where yellowed rice slowly drinks up completely savory chicken juices and roasted spices.
Ingredients
Quantities are for one portion.
- 200 mlchicken stock
- 15 mlolive oil
- 1red bell pepper, finely diced
- salt and pepper to taste
- 1onion, chopped
- 70 gwhite rice
- 1 tspground turmeric
- 1tomato, diced
- 150 gchicken thighs, bone-in and skin-on
- 2garlic cloves, minced
- 1 tspsweet paprika
- 15 gfresh parsley, freshly chopped
Method
- Season the chicken with paprika, turmeric, salt, and pepper.
- Heat the olive oil in a wide pot. Sear the chicken pieces on both sides until browned.
- Add the onion, bell pepper, garlic, and tomato, cooking until softened and scraping the bottom of the pan.
- Add the dry white rice, stirring everything together.
- Pour in the chicken stock and bring the liquid to a boil.
- Cover the pot and lower the heat. Simmer until the chicken and rice are tender.
- Fold the parsley through and serve hot.
