Ingredients

Quantities are for one portion.

  • 100 gcanned black beans
  • 10 gfresh cilantro (coriander), chopped
  • 30 gcotija (or feta) cheese, crumbled
  • 20 gwhite onion, finely chopped
  • 1 tbspvegetable oil
  • salt to taste
  • 3corn tortillas
  • 2eggs

Method

  1. Heat the canned black beans with their liquid in a small pot. Blend them until they form a smooth, pourable, creamy sauce. Keep warm over low heat.
  2. Heat half the vegetable oil in a pan. Fry the corn tortillas for just a few seconds on each side until softened.
  3. Using tongs, dip each softened tortilla into the warm black bean sauce until coated.
  4. Fold the coated tortillas in half and arrange them on a serving plate. Pour any remaining bean sauce over them.
  5. In the same pan, fry the eggs in the remaining oil until the whites are set but the yolks are runny.
  6. Place the fried eggs on top of the folded enfrijoladas.
  7. Garnish the dish with the crumbled cotija cheese, chopped white onion, and fresh cilantro.
