Enfrijoladas with Cheese and Egg
Soft corn tortillas dipped in a creamy, savory black bean sauce, folded and topped with crumbled cheese, onion, and a fried egg.
Ingredients
Quantities are for one portion.
- 100 gcanned black beans
- 10 gfresh cilantro (coriander), chopped
- 30 gcotija (or feta) cheese, crumbled
- 20 gwhite onion, finely chopped
- 1 tbspvegetable oil
- salt to taste
- 3corn tortillas
- 2eggs
Method
- Heat the canned black beans with their liquid in a small pot. Blend them until they form a smooth, pourable, creamy sauce. Keep warm over low heat.
- Heat half the vegetable oil in a pan. Fry the corn tortillas for just a few seconds on each side until softened.
- Using tongs, dip each softened tortilla into the warm black bean sauce until coated.
- Fold the coated tortillas in half and arrange them on a serving plate. Pour any remaining bean sauce over them.
- In the same pan, fry the eggs in the remaining oil until the whites are set but the yolks are runny.
- Place the fried eggs on top of the folded enfrijoladas.
- Garnish the dish with the crumbled cotija cheese, chopped white onion, and fresh cilantro.
