Nopal and Chicken Skillet with Rice
A traditional rustic stir-fry combining tender chicken strips and unique, slightly tart cactus paddles (nopales) in a savory tomato sauce.
Ingredients
Quantities are for one portion.
- 150 gchicken breast, sliced
- 50 gnopal (cactus paddle), spines removed, cut into strips
- 15 mlolive oil
- 70 gdry white rice
- salt and pepper to taste
- 1onion, sliced
- 1 tspcumin
- 50 gcanned diced tomatoes
Method
- Rinse the white rice and steam it until fluffy.
- In a small pot, boil the nopal strips in salted water until tender and all the sticky sap is released. Drain and rinse under cold water.
- Season the sliced chicken breast with the cumin, salt, and pepper.
- Heat the olive oil in a wide pan or skillet. Fry the chicken until golden brown and cooked through.
- Add the sliced onion to the pan, cooking until softened.
- Stir in the boiled nopal strips and the canned diced tomatoes.
- Simmer the mixture for a few minutes until the sauce reduces. Serve the hot skillet mixture next to the steamed rice.
