Ingredients

Quantities are for one portion.

  • 150 gchicken breast, sliced
  • 50 gnopal (cactus paddle), spines removed, cut into strips
  • 15 mlolive oil
  • 70 gdry white rice
  • salt and pepper to taste
  • 1onion, sliced
  • 1 tspcumin
  • 50 gcanned diced tomatoes

Method

  1. Rinse the white rice and steam it until fluffy.
  2. In a small pot, boil the nopal strips in salted water until tender and all the sticky sap is released. Drain and rinse under cold water.
  3. Season the sliced chicken breast with the cumin, salt, and pepper.
  4. Heat the olive oil in a wide pan or skillet. Fry the chicken until golden brown and cooked through.
  5. Add the sliced onion to the pan, cooking until softened.
  6. Stir in the boiled nopal strips and the canned diced tomatoes.
  7. Simmer the mixture for a few minutes until the sauce reduces. Serve the hot skillet mixture next to the steamed rice.
