Ingredients

Quantities are for one portion.

  • 50 mlmentsuyu (noodle soup base)
  • 50 gedamame beans, shelled
  • 100 gsomen noodles (dry)
  • 0.5cucumber, sliced
  • 1egg
  • 1 tbspsesame oil
  • 10 gsesame seeds
  • 80 gtomato, diced
  • 0.5spring onion, finely sliced

Method

  1. Boil the somen noodles in unsalted water for just two minutes, then immediately drain and rinse thoroughly under ice-cold water until completely chilled.
  2. Boil the egg in a small pot for seven minutes for a soft center, then peel and slice in half.
  3. In a small bowl, whisk the mentsuyu and sesame oil together to create the dressing.
  4. Arrange the chilled noodles in a deep bowl and neatly place the diced tomato, sliced cucumber, shelled edamame, and egg halves on top.
  5. Pour the savory dressing over the noodles and vegetables.
  6. Garnish heavily with the sesame seeds and sliced spring onion before serving cold.
