Teriyaki Salmon Donburi

Ingredients

Quantities are for one portion.

  • 15 gsugar
  • 1 tbspmirin
  • 2 tbspsoy sauce (use tamari for gluten-free)
  • 70 gdry white rice
  • 10 gsesame seeds
  • 1 tbspsake
  • 50 gbroccoli florets
  • 150 gsalmon fillet

Method

  1. Rinse the white rice and steam it until fluffy. Keep warm.
  2. Mix the soy sauce, mirin, sake, and sugar in a small bowl to create the teriyaki sauce.
  3. Blanch the broccoli florets in boiling water for a few minutes until tender but still crisp. Drain and set aside.
  4. Heat a pan over medium heat. Place the salmon fillet skin-side down and cook until crispy, then flip to sear the other side.
  5. Pour the teriyaki sauce mixture into the pan with the salmon. Turn the heat to low.
  6. Spoon the bubbling sauce over the fish repeatedly as it reduces into a sticky, glossy glaze.
  7. Place the hot steamed rice in a bowl, top with the glazed salmon and broccoli, and sprinkle with sesame seeds.
