Teriyaki Salmon Donburi
A sweet and savory glazed salmon fillet served atop a bowl of steaming white rice, accompanied by blanched broccoli.
Ingredients
Quantities are for one portion.
- 15 gsugar
- 1 tbspmirin
- 2 tbspsoy sauce (use tamari for gluten-free)
- 70 gdry white rice
- 10 gsesame seeds
- 1 tbspsake
- 50 gbroccoli florets
- 150 gsalmon fillet
Method
- Rinse the white rice and steam it until fluffy. Keep warm.
- Mix the soy sauce, mirin, sake, and sugar in a small bowl to create the teriyaki sauce.
- Blanch the broccoli florets in boiling water for a few minutes until tender but still crisp. Drain and set aside.
- Heat a pan over medium heat. Place the salmon fillet skin-side down and cook until crispy, then flip to sear the other side.
- Pour the teriyaki sauce mixture into the pan with the salmon. Turn the heat to low.
- Spoon the bubbling sauce over the fish repeatedly as it reduces into a sticky, glossy glaze.
- Place the hot steamed rice in a bowl, top with the glazed salmon and broccoli, and sprinkle with sesame seeds.
