Vegetarian Okonomiyaki
A savory, satisfying Japanese cabbage pancake pan-fried to perfection and heavily drizzled with sweet okonomiyaki sauce and creamy mayonnaise.
Ingredients
Quantities are for one portion.
- 15 gJapanese mayonnaise
- 60 mlwater
- 1 tbspvegetable oil
- 2eggs
- 5 gaonori (seaweed flakes)
- 200 gcabbage, finely shredded
- 80 gplain flour
- 40 mlokonomiyaki sauce (store-bought)
Method
- In a large mixing bowl, whisk the flour, eggs, and water together into a smooth batter.
- Fold the finely shredded cabbage into the batter until everything is thoroughly combined and coated.
- Heat the vegetable oil in a frying pan over medium heat. Pour the cabbage mixture into the pan, shaping it into a thick, round pancake.
- Cover the pan and cook until the bottom is deeply browned, then carefully flip the pancake and cook the other side until fully cooked through.
- Transfer the hot okonomiyaki to a plate.
- Drizzle the top generously with the okonomiyaki sauce and Japanese mayonnaise, then sprinkle the aonori over everything before serving.
