Ingredients

Quantities are for one portion.

  • 15 gJapanese mayonnaise
  • 60 mlwater
  • 1 tbspvegetable oil
  • 2eggs
  • 5 gaonori (seaweed flakes)
  • 200 gcabbage, finely shredded
  • 80 gplain flour
  • 40 mlokonomiyaki sauce (store-bought)

Method

  1. In a large mixing bowl, whisk the flour, eggs, and water together into a smooth batter.
  2. Fold the finely shredded cabbage into the batter until everything is thoroughly combined and coated.
  3. Heat the vegetable oil in a frying pan over medium heat. Pour the cabbage mixture into the pan, shaping it into a thick, round pancake.
  4. Cover the pan and cook until the bottom is deeply browned, then carefully flip the pancake and cook the other side until fully cooked through.
  5. Transfer the hot okonomiyaki to a plate.
  6. Drizzle the top generously with the okonomiyaki sauce and Japanese mayonnaise, then sprinkle the aonori over everything before serving.
