Ingredients

Quantities are for one portion.

  • 50 gshirataki (or glass) noodles
  • 100 mldashi stock
  • 15 gsugar
  • 50 gfirm tofu, cubed
  • 1 tbspmirin
  • 1onion, sliced
  • 150 gthinly sliced beef (ribeye or sirloin)
  • 20 mlsoy sauce
  • 1 tbspsake

Method

  1. If using dry glass noodles, soak them in warm water until soft. Drain and set aside.
  2. In a shallow pot or wide pan, mix the dashi stock, soy sauce, mirin, sake, and sugar.
  3. Bring the sweet and savory broth to a simmer over medium heat.
  4. Add the sliced onion, cubed firm tofu, and soaked noodles to the pot. Simmer until the vegetables become soft.
  5. Lay the thinly sliced beef into the simmering liquid. Cook briefly until the meat just loses its pink color.
  6. Avoid overcooking the beef. Serve the hot pot components in bowls, spooning the sweet soy broth over the top.
