Sukiyaki
A rich, communal-style hot pot where thinly sliced beef and vegetables are simmered in a sweet soy-based broth.
Ingredients
Quantities are for one portion.
- 50 gshirataki (or glass) noodles
- 100 mldashi stock
- 15 gsugar
- 50 gfirm tofu, cubed
- 1 tbspmirin
- 1onion, sliced
- 150 gthinly sliced beef (ribeye or sirloin)
- 20 mlsoy sauce
- 1 tbspsake
Method
- If using dry glass noodles, soak them in warm water until soft. Drain and set aside.
- In a shallow pot or wide pan, mix the dashi stock, soy sauce, mirin, sake, and sugar.
- Bring the sweet and savory broth to a simmer over medium heat.
- Add the sliced onion, cubed firm tofu, and soaked noodles to the pot. Simmer until the vegetables become soft.
- Lay the thinly sliced beef into the simmering liquid. Cook briefly until the meat just loses its pink color.
- Avoid overcooking the beef. Serve the hot pot components in bowls, spooning the sweet soy broth over the top.
