Samgyeopsal with Rice and Ssam
Thick, sizzling slices of unmarinated pork belly, roasted and served with fresh lettuce, rice, and savory dipping sauce.
Ingredients
Quantities are for one portion.
- 150 gthick pork belly slice
- 70 gdry white rice
- 50 glettuce leaves
- 1 tbspssamjang (dipping sauce)
- 1 tbspsesame oil
- 2garlic cloves, sliced
- 1 tspsalt
Method
- Rinse and cook the white rice until fluffy. Keep warm.
- In a small dipping bowl, mix the sesame oil with a pinch of salt to act as a dip for the meat.
- Heat a grill or heavy pan. Lay the thick pork belly slices and the sliced garlic out flat.
- Grill the pork until the fat renders and both sides are crusty and golden brown. Snip into bite-sized pieces with scissors.
- Remove the pork and the roasted garlic slices from the pan.
- Serve the hot crispy pork, dipping oil, and ssamjang alongside the fresh lettuce leaves and warm rice.
- Wrap a piece of pork, garlic, and rice in a lettuce leaf with some sauce to eat.
