Ingredients

Quantities are for one portion.

  • 1 tspdried oregano
  • 10 mlolive oil
  • 2 tbspwhite vinegar
  • 0.5red onion, very thinly sliced
  • 60 gmozzarella cheese, grated
  • Pinch of salt
  • 100 mlwarm water
  • 80 gmasa harina (corn flour)
  • 100 gcabbage, very finely shredded
  • 50 gcarrot, grated

Method

  1. In a bowl, toss the finely shredded cabbage, grated carrot, and sliced red onion with the white vinegar, dried oregano, and salt.
  2. Let the curtido (cabbage slaw) marinate and soften while you prepare the pupusas.
  3. In a separate bowl, mix the masa harina with the warm water and a pinch of salt, kneading until a smooth, pliable dough forms.
  4. Divide the dough into equal portions, flatten each into a small disc, and place a mound of grated cheese in the center.
  5. Fold the edges of the dough over the cheese to completely enclose it, then gently pat back into a flat, round disc.
  6. Lightly grease a heavy pan or griddle with the olive oil and cook the pupusas over medium heat for four to five minutes on each side.
  7. Serve the hot, cheesy pupusas immediately with a generous helping of the tangy curtido on top.
