Ingredients

Quantities are for one portion.

  • 50 gkasar cheese (or mozzarella), grated
  • 15 mlolive oil
  • salt and pepper to taste
  • 1onion, finely chopped
  • 1green pepper, finely chopped
  • 1tomato, finely chopped
  • 100 gbeef mince

Method

  1. Preheat the oven to its maximum temperature. Place a baking stone or heavy tray inside to get hot.
  2. In a bowl, knead the beef mince with the finely chopped onion, green pepper, tomato, olive oil, salt, and pepper. Do not pre-cook the meat; it must go on raw to infuse the bread with juices.
  3. Shape the flatbread or dough into a long, thin oval shape, pinching the ends to form a boat.
  4. Spread the raw meat mixture thinly and evenly down the center of the dough oval, leaving a thin border.
  5. Fold the edges of the dough slightly inwards over the meat to create a raised crust.
  6. Scatter the grated cheese over the meat filling.
  7. Transfer the pide to the hot stone or tray in the oven. Bake rapidly until the crust is dark golden and the cheese is bubbling and browned. Slice horizontally to serve.
