Ingredients

Quantities are for one portion.

  • 50 gfeta cheese, crumbled
  • 150 gpizza dough (store-bought)
  • 15 mlolive oil
  • 0.5onion, finely chopped
  • 1egg
  • 100 gfresh spinach

Method

  1. Preheat the oven to its absolute maximum temperature and place a baking tray inside to heat up.
  2. Heat the olive oil in a pan and sauté the finely chopped onion until soft. Add the fresh spinach and cook until completely wilted, then squeeze out all excess liquid.
  3. Roll the pizza dough out into a long, thin oval shape on a piece of parchment paper.
  4. Spread the spinach mixture down the center of the dough, leaving a border. Fold the edges inwards to create a boat shape, pinching the ends tightly.
  5. Sprinkle the crumbled feta heavily over the spinach, then crack the egg directly into the center of the boat.
  6. Carefully slide the parchment paper onto the hot baking tray in the oven and bake until the crust is deeply golden and the egg is set.
