Ingredients

Quantities are for one portion.

  • 150 gbeef sirloin strips (marinated in a drop of milk/oil)
  • salt and pepper to taste
  • 1 tbspvegetable oil (for shallow frying)
  • 15 gbutter
  • 150 gpotatoes, peeled
  • 50 mltomato passata
  • 1garlic clove, minced
  • 50 gplain yogurt, mixed with a pinch of salt

Method

  1. Ensure the beef strips have marinated briefly to tenderize them.
  2. Cut the peeled potatoes into the thinnest possible matchsticks. Rinse them in cold water to remove starch, then pat them dry.
  3. Heat the vegetable oil in a pan. Fry the potato matchsticks in batches until they are golden and crispy like straw. Drain and salt them.
  4. Mix the plain yogurt with the minced garlic and set aside.
  5. In a small pot, simmer the tomato passata with the butter until it forms a hot, shiny sauce.
  6. Heat a dry frying pan. Sear the marinated beef strips quickly over high heat until browned and cooked through.
  7. To assemble: cover a wide plate with the crispy potato straw. Spoon the cold garlic yogurt over the potatoes, then pour the hot tomato sauce on top. Finally, dump the seared beef strips over the center.
