Etli Nohut with Rice

A fundamental Turkish home-cooked meal of plump chickpeas and beef pieces simmered in a heavy, spicy red pepper and tomato broth.

Ingredients

Quantities are for one portion.

  • 15 mlolive oil
  • 70 gdry white rice
  • 1 tbspred pepper paste (biber salçası)
  • 1onion, finely diced
  • salt to taste
  • 15 gtomato paste
  • 100 gbeef cubes
  • 70 gdry chickpeas

Method

  1. Soak the dry chickpeas in abundant cold water overnight. Drain them before cooking.
  2. Heat the olive oil in a heavy pot or pressure cooker. Sear the beef cubes until browned on all sides.
  3. Add the finely diced onion to the pot, cooking until translucent and soft.
  4. Stir in the tomato paste and red pepper paste, cooking them in the hot oil until fragrant.
  5. Add the soaked chickpeas. Pour in sufficient water to submerge the beans and meat by an inch.
  6. Simmer uncovered for a few hours (or cook fast under pressure) until the chickpeas are buttery soft, holding their shape but yielding easily, and the broth is dense.
  7. Rinse and steam the dry white rice in a separate pot until fluffy. Serve the thick chickpea stew ladled over the hot rice.
