Kuru Fasulye with Rice

Ingredients

Quantities are for one portion.

  • 100 gbeef, cubed
  • 15 mlolive oil
  • 70 gdry white rice
  • 1onion, finely chopped
  • salt to taste
  • 15 gtomato paste
  • 1 pinchred pepper flakes
  • 70 gdry white beans (haricot)

Method

  1. Soak the dry white beans in cold water overnight. Drain them well.
  2. Heat the olive oil in a pot or pressure cooker. Sear the cubed beef until a brown crust forms.
  3. Add the finely chopped onion to the beef, sautéing until translucent.
  4. Stir the tomato paste and red pepper flakes into the pot, cooking briefly to toast the paste.
  5. Add the soaked white beans. Pour in enough water to submerge the ingredients.
  6. Simmer slowly for a few hours (or cook under pressure) until the beans are buttery soft and the broth thickens into a rich red sauce.
  7. Rinse the dry white rice and cook it in a separate pot until fluffy. Serve the thick bean and beef stew over the hot rice.
