Kuru Fasulye with Rice
The ultimate Turkish comfort food: tender white beans and cubes of beef slow-cooked in a rich red tomato and pepper paste broth.
Ingredients
Quantities are for one portion.
- 100 gbeef, cubed
- 15 mlolive oil
- 70 gdry white rice
- 1onion, finely chopped
- salt to taste
- 15 gtomato paste
- 1 pinchred pepper flakes
- 70 gdry white beans (haricot)
Method
- Soak the dry white beans in cold water overnight. Drain them well.
- Heat the olive oil in a pot or pressure cooker. Sear the cubed beef until a brown crust forms.
- Add the finely chopped onion to the beef, sautéing until translucent.
- Stir the tomato paste and red pepper flakes into the pot, cooking briefly to toast the paste.
- Add the soaked white beans. Pour in enough water to submerge the ingredients.
- Simmer slowly for a few hours (or cook under pressure) until the beans are buttery soft and the broth thickens into a rich red sauce.
- Rinse the dry white rice and cook it in a separate pot until fluffy. Serve the thick bean and beef stew over the hot rice.
