Menemen with Sucuk and Bread
A vibrant, messy pan of scrambled eggs slowly cooked into a stew of soft tomatoes and green peppers, spiced by rendered Turkish sausage.
Ingredients
Quantities are for one portion.
- 50 gsucuk (turkish garlic sausage), sliced
- 15 mlolive oil
- salt and pepper to taste
- 3eggs
- 70 gcrusty bread
- 2tomatoes, peeled and chopped
- 2green pointed peppers, chopped
Method
- Heat the olive oil in a wide frying pan. Add the sliced sucuk, frying it briefly until its bright red, garlicky oil renders into the pan.
- Add the chopped green peppers to the seasoned oil, cooking until soft.
- Stir in the peeled, chopped tomatoes. Reduce the heat and let the mixture simmer until the tomatoes break down into a thick, concentrated sauce.
- Crack the eggs directly into the tomato base.
- Wait thirty seconds, then barely scramble the eggs, gently breaking the yolks into the sauce.
- Allow it to cook until the eggs are just barely set; menemen should be slightly runny and juicy, not a dry scramble.
- Remove the pan from the heat immediately. Serve hot directly in the pan with the crusty bread torn into chunks for dipping.
