Tavuk Sote with Rice
A fast, vibrant chicken stir-fry simmering cubed poultry with green and red peppers in a light tomato broth.
Ingredients
Quantities are for one portion.
- 150 gchicken breast, cubed
- 15 mlolive oil
- 1red bell pepper, chopped
- 70 gdry white rice
- salt and pepper to taste
- 1onion, diced
- 50 mltomato passata
- 1garlic clove, minced
- 1green pointed pepper, chopped
Method
- Steam the white rice in a small pot until soft and fluffy. Keep warm.
- Heat the olive oil in a wide pan or wok. Add the cubed chicken breast and sauté until it turns opaque and just begins to brown.
- Add the diced onion, minced garlic, chopped green pepper, and chopped red pepper to the chicken.
- Cook until the vegetables soften and their colors brighten.
- Stir the tomato passata into the pan. Pour in a splash of hot water to create a thin broth.
- Bring it to a simmer, reduce the heat, and cook until the sauce thickens slightly and the chicken is tender.
- Serve the vibrant chicken and pepper sote in a wide bowl, paired with a portion of the warm white rice to soak up the broth.
