Ingredients

Quantities are for one portion.

  • 150 gchicken breast, cubed
  • 15 mlolive oil
  • 1red bell pepper, chopped
  • 70 gdry white rice
  • salt and pepper to taste
  • 1onion, diced
  • 50 mltomato passata
  • 1garlic clove, minced
  • 1green pointed pepper, chopped

Method

  1. Steam the white rice in a small pot until soft and fluffy. Keep warm.
  2. Heat the olive oil in a wide pan or wok. Add the cubed chicken breast and sauté until it turns opaque and just begins to brown.
  3. Add the diced onion, minced garlic, chopped green pepper, and chopped red pepper to the chicken.
  4. Cook until the vegetables soften and their colors brighten.
  5. Stir the tomato passata into the pan. Pour in a splash of hot water to create a thin broth.
  6. Bring it to a simmer, reduce the heat, and cook until the sauce thickens slightly and the chicken is tender.
  7. Serve the vibrant chicken and pepper sote in a wide bowl, paired with a portion of the warm white rice to soak up the broth.
