Giouvetsi with Beef
A classic Sunday Greek comfort dish of beef stew baked with orzo pasta in a fragrant tomato sauce.
Ingredients
Quantities are for one portion.
- 10 gparmesan cheese, grated
- 15 mlolive oil
- 1 pinchground cinnamon
- salt and pepper to taste
- 1onion, diced
- 70 gorzo pasta
- 150 gcanned diced tomatoes
- 150 gbeef stewing cuts
- 2garlic cloves, minced
Method
- Heat the olive oil in a heavy, ovenproof pot and sear the beef chunks until browned on all sides.
- Toss the diced onion into the pot, cooking until soft. Stir in the minced garlic and the cinnamon.
- Pour the diced tomatoes into the pot along with a splash of water, bring to a simmer, then season with salt and pepper.
- Cover the pot, lower the heat, and let the beef simmer slowly until it begins to tenderize.
- Preheat the oven. Pour the dry orzo directly into the simmering sauce, stirring well. Add a little hot water if the sauce looks too thick.
- Transfer the uncovered pot into the oven and bake until the orzo has absorbed the liquid and is tender.
- Serve the hearty dish hot, sprinkled evenly with the grated parmesan cheese.
