Espinacas con Garbanzos with Fried Egg
An Andalusian tapas staple: a thick, spiced stew of spinach and chickpeas thickened with fried bread and cumin, topped with an egg.
Ingredients
Quantities are for one portion.
- 1slice crusty bread
- 15 mlolive oil
- 100 gfresh spinach leaves
- 1 tspcumin
- salt to taste
- 100 gcanned chickpeas, rinsed
- 1egg
- 1 tspsmoked paprika
- 2garlic cloves, sliced
Method
- Heat one tablespoon of olive oil in a pan. Fry the slice of crusty bread and the sliced garlic until crisp and golden.
- Remove the fried bread and garlic. Place them in a mortar and pestle (or small blender) with the cumin and smoked paprika. Mash with a splash of water into a thick paste (majado).
- In the same pan, blanch the fresh spinach until fully wilted. Drain excess water.
- Add the rinsed chickpeas and the wilted spinach to the pan.
- Stir the spiced bread paste into the pan. Simmer everything together until it forms a thick, unified, and fragrant hash.
- In a separate small pan, heat the remaining olive oil and fry the egg until the edges are crispy and the yolk is soft.
- Mound the thick spinach and chickpea stew on a plate and lay the crispy fried egg on top.
