Huevos Rotos with Jamón and Chorizo
A beloved, messy tavern dish of hot, crispy fries topped with fried eggs that are 'broken' into the potatoes alongside cured meats.
Ingredients
Quantities are for one portion.
- 1 tbspvegetable oil (for frying)
- 15 mlolive oil
- 30 gserrano ham (jamón), torn into strips
- 20 gchorizo, sliced
- salt to taste
- 150 gpotatoes, cut into thick fries
- 2eggs
Method
- Dry the potato fries well. Heat the vegetable oil in a pan or use an oven to fry the potatoes until they are golden brown and totally crispy. Salt them immediately.
- Heat the olive oil in a separate frying pan over medium-high heat. Fry the sliced chorizo briefly until its oil renders, then remove it.
- In that same oil, fry the eggs until the whites develop crispy, lacy edges but the yolks remain liquid.
- Pile the hot, crispy fries onto a large serving plate.
- Scatter the fried chorizo and the torn strips of raw serrano ham over the fries so the fat on the ham melts slightly from the heat.
- Lay the hot fried eggs directly over the potatoes and meat.
- Use a knife and fork to break the egg yolks over the dish immediately before eating, letting the yolk sauce the fries.
