Conejo al Ajillo with Roasted Potatoes
A rustic, intensely pungent countryside dish of rabbit sections fried dark in olive oil and simmered with heaps of garlic and white wine.
Ingredients
Quantities are for one portion.
- 50 mlwhite wine
- 15 mlolive oil
- salt and pepper to taste
- 4garlic cloves (whole, unpeeled)
- 150 gpotatoes, cubed
- 150 grabbit pieces (bone-in)
- 10 gfresh parsley, chopped
Method
- Preheat the oven. Toss the cubed potatoes in a little olive oil and salt, and roast them until crispy.
- Season the rabbit pieces with salt and pepper.
- Heat the olive oil in a heavy, wide pan. Crush the unpeeled garlic cloves with the flat of a knife and add them to the oil to fry.
- Add the rabbit pieces. Fry them slowly until they develop a very dark, thick crust on all sides.
- Pour the white wine into the hot pan.
- Allow the wine to reduce down to a thick, sticky glaze that coats the rabbit and the roasted garlic.
- Toss the fresh parsley into the pan. Serve the dark, garlicky rabbit hot alongside the crispy roasted potatoes.
