Ingredients

Quantities are for one portion.

  • 150 gchicken breast, diced
  • 1 tbspbiryani masala
  • 1onion, thinly sliced
  • 1 tbspvegetable oil
  • salt to taste
  • 10 gbutter
  • 70 gbasmati rice
  • 2garlic cloves, minced
  • 50 gplain yogurt
  • 10 gfresh mint, chopped

Method

  1. Mix the diced chicken with the plain yogurt, minced garlic, half the biryani masala, and salt. Marinate for at least half an hour.
  2. Rinse the dry basmati rice, then parboil it in salted water until partially cooked. Drain well.
  3. Heat the vegetable oil in a pot and fry the thinly sliced onion until caramelized and golden. Remove half the onions and set aside for garnish.
  4. In the same pot, add the marinated chicken and cook until mostly opaque.
  5. Layer the parboiled rice directly over the chicken in the pot. Sprinkle the remaining biryani masala, butter pieces, and chopped mint over the rice.
  6. Cover the pot tightly with a lid and cook over low heat to steam the rice and cook the chicken fully.
  7. Uncover, gently fluff the rice and chicken together, top with the reserved crispy onions, and serve.
