Chicken Biryani
A masterpiece of fragrant spiced rice intricately mixed with tender marinated chicken, offering an explosion of complex flavors in every bite.
Ingredients
Quantities are for one portion.
- 150 gchicken breast, diced
- 1 tbspbiryani masala
- 1onion, thinly sliced
- 1 tbspvegetable oil
- salt to taste
- 10 gbutter
- 70 gbasmati rice
- 2garlic cloves, minced
- 50 gplain yogurt
- 10 gfresh mint, chopped
Method
- Mix the diced chicken with the plain yogurt, minced garlic, half the biryani masala, and salt. Marinate for at least half an hour.
- Rinse the dry basmati rice, then parboil it in salted water until partially cooked. Drain well.
- Heat the vegetable oil in a pot and fry the thinly sliced onion until caramelized and golden. Remove half the onions and set aside for garnish.
- In the same pot, add the marinated chicken and cook until mostly opaque.
- Layer the parboiled rice directly over the chicken in the pot. Sprinkle the remaining biryani masala, butter pieces, and chopped mint over the rice.
- Cover the pot tightly with a lid and cook over low heat to steam the rice and cook the chicken fully.
- Uncover, gently fluff the rice and chicken together, top with the reserved crispy onions, and serve.
