Chicken Jalfrezi with Rice
An intensely vibrant, relatively dry curry of tender chicken wok-tossed with brightly colored bell peppers and sharp onions.
Ingredients
Quantities are for one portion.
- 1green bell pepper, thickly sliced
- 150 gchicken breast, diced
- 15 mlolive oil
- 1red bell pepper, thickly sliced
- 1onion, thickly sliced
- salt to taste
- 100 gcanned diced tomatoes
- 1 tspgaram masala
- 70 gbasmati rice
- 2garlic cloves, minced
Method
- Boil the dry basmati rice in salted water until cooked, then drain.
- Season the diced chicken with salt and half the garam masala.
- Heat the olive oil in a wok or large pan. Stir-fry the chicken until browned, then remove it.
- Add the sliced onion and bell peppers to the hot wok. Stir-fry until they soften slightly but stay crunchy.
- Add the minced garlic and the remaining garam masala to the pan, toasting briefly.
- Pour in the canned diced tomatoes and return the chicken, simmering until everything is hot.
- Serve the thick chicken jalfrezi alongside the steamed rice.
