Ingredients

Quantities are for one portion.

  • 1green bell pepper, thickly sliced
  • 150 gchicken breast, diced
  • 15 mlolive oil
  • 1red bell pepper, thickly sliced
  • 1onion, thickly sliced
  • salt to taste
  • 100 gcanned diced tomatoes
  • 1 tspgaram masala
  • 70 gbasmati rice
  • 2garlic cloves, minced

Method

  1. Boil the dry basmati rice in salted water until cooked, then drain.
  2. Season the diced chicken with salt and half the garam masala.
  3. Heat the olive oil in a wok or large pan. Stir-fry the chicken until browned, then remove it.
  4. Add the sliced onion and bell peppers to the hot wok. Stir-fry until they soften slightly but stay crunchy.
  5. Add the minced garlic and the remaining garam masala to the pan, toasting briefly.
  6. Pour in the canned diced tomatoes and return the chicken, simmering until everything is hot.
  7. Serve the thick chicken jalfrezi alongside the steamed rice.
