Chole Bhature
A popular North Indian dish of spiced chickpea curry served with deep-fried, fluffy leavened bread.
Ingredients
Quantities are for one portion.
- 1 tspcumin seeds
- 10 gfresh ginger, minced
- 1onion, finely chopped
- 1 tbspchole masala
- 20 tbspvegetable oil
- 200 gcanned chickpeas, drained
- 150 mltomato passata
- 2garlic cloves, minced
- 80 gplain flour
- 30 gplain yogurt
Method
- Mix the plain flour with the yogurt and a splash of water to form a soft dough, then cover and let it rest while you make the curry.
- Heat a little of the vegetable oil in a pan over medium heat, add the cumin seeds, and let them sizzle, then sauté the onion until golden.
- Add the garlic and ginger and cook until fragrant, then stir in the chole masala and tomato passata, simmering until thick.
- Add the chickpeas with a splash of water and simmer until the curry is rich and the flavours have melded.
- Divide the rested dough into rounds and roll them out, then fry in the remaining hot oil until puffed and golden on both sides.
- Serve the hot chickpea curry alongside the freshly fried bhature.
