Ingredients

Quantities are for one portion.

  • 1 tspcumin seeds
  • 10 gfresh ginger, minced
  • 1onion, finely chopped
  • 1 tbspchole masala
  • 20 tbspvegetable oil
  • 200 gcanned chickpeas, drained
  • 150 mltomato passata
  • 2garlic cloves, minced
  • 80 gplain flour
  • 30 gplain yogurt

Method

  1. Mix the plain flour with the yogurt and a splash of water to form a soft dough, then cover and let it rest while you make the curry.
  2. Heat a little of the vegetable oil in a pan over medium heat, add the cumin seeds, and let them sizzle, then sauté the onion until golden.
  3. Add the garlic and ginger and cook until fragrant, then stir in the chole masala and tomato passata, simmering until thick.
  4. Add the chickpeas with a splash of water and simmer until the curry is rich and the flavours have melded.
  5. Divide the rested dough into rounds and roll them out, then fry in the remaining hot oil until puffed and golden on both sides.
  6. Serve the hot chickpea curry alongside the freshly fried bhature.
