Ingredients

Quantities are for one portion.

  • 80 gfeta cheese, crumbled
  • 1 tspdried oregano
  • 10 mlolive oil
  • 0.5red onion, sliced
  • salt to taste
  • 200 gpotatoes, sliced
  • 60 gcrusty bread
  • 150 gzucchini, sliced
  • 100 gtomato, chopped
  • 2garlic cloves, minced
  • 10 gfresh parsley, chopped

Method

  1. Preheat the oven to 200°C (400°F).
  2. In a large baking dish, combine the sliced zucchini, potatoes, red onion, tomatoes, and minced garlic.
  3. Drizzle with the olive oil, sprinkle with dried oregano and salt, then toss until the vegetables are evenly coated.
  4. Roast in the oven for forty-five minutes, or until the vegetables are completely tender and slightly caramelized on the edges.
  5. Remove from the oven and scatter the crumbled feta cheese and fresh parsley over the hot vegetables.
  6. Serve the warm briam directly from the dish alongside thick slices of the crusty bread to soak up the juices.
