Ingredients

Quantities are for one portion.

  • 10 mlwhite wine
  • 15 mlolive oil
  • salt and pepper to taste
  • 1bay leaf
  • 150 gpotatoes, cut into fries
  • 1egg
  • 150 gbeef sirloin steak, pounded thin
  • 1garlic clove, crushed
  • 1 tbspvegetable oil (for potatoes)

Method

  1. Toss the potato fries in the vegetable oil and a pinch of salt. Fry or bake until golden and crispy. Set aside and keep warm.
  2. Season the flattened steak with salt and pepper.
  3. Heat the olive oil in a frying pan over high heat. Add the crushed garlic and the bay leaf to flavor the oil.
  4. Sear the steak rapidly to brown both sides without overcooking. Remove the steak and set it aside.
  5. Pour the white wine into the hot pan to deglaze it, creating a quick, savory pan sauce. Set sauce aside.
  6. In a small pan, fry the egg until the white is set but the yolk remains very runny.
  7. Arrange the crispy fries on a plate. Lay the steak down, pour the garlic wine sauce over it, and place the fried egg directly on the meat.
