Bitoque with Fries and Egg
The ultimate Portuguese tavern meal—a pan-fried steak bathed in a garlic wine sauce, topped with an egg and served with fries.
Ingredients
Quantities are for one portion.
- 10 mlwhite wine
- 15 mlolive oil
- salt and pepper to taste
- 1bay leaf
- 150 gpotatoes, cut into fries
- 1egg
- 150 gbeef sirloin steak, pounded thin
- 1garlic clove, crushed
- 1 tbspvegetable oil (for potatoes)
Method
- Toss the potato fries in the vegetable oil and a pinch of salt. Fry or bake until golden and crispy. Set aside and keep warm.
- Season the flattened steak with salt and pepper.
- Heat the olive oil in a frying pan over high heat. Add the crushed garlic and the bay leaf to flavor the oil.
- Sear the steak rapidly to brown both sides without overcooking. Remove the steak and set it aside.
- Pour the white wine into the hot pan to deglaze it, creating a quick, savory pan sauce. Set sauce aside.
- In a small pan, fry the egg until the white is set but the yolk remains very runny.
- Arrange the crispy fries on a plate. Lay the steak down, pour the garlic wine sauce over it, and place the fried egg directly on the meat.
