Cozido à Portuguesa
A monumental, comforting boiled dinner stacking tender beef, pork, and smoky sausage with soft root vegetables and cabbage.
Ingredients
Quantities are for one portion.
- 50 gpork belly slice
- 30 gchouriço (portuguese sausage)
- 10 mlolive oil
- 100 gstewing beef, large chunks
- salt to taste
- 150 gpotatoes, peeled and halved
- 50 gcabbage, cut into wedges
- 1carrot, peeled and halved
- 1turnip, peeled and quartered
- 10 gfresh parsley
Method
- Place the stewing beef and pork belly in a large pot. Cover generously with water and add a pinch of salt.
- Bring to a boil, then lower the heat. Skim any foam from the surface. Simmer slowly for over an hour until the meat begins to turn tender.
- Add the chouriço sausage, the turnip, and the carrot to the pot. Cook for twenty minutes.
- Add the potato halves and cabbage wedges, ensuring they are submerged in the rich broth.
- Simmer until the potatoes are soft and the cabbage is cooked but holds its shape.
- Remove the meats and slice them. Arrange the sliced meats, root vegetables, and cabbage on a large platter.
- Drizzle the dish with the olive oil, scatter over the chopped parsley, and serve hot, perhaps with a cup of the savory cooking broth on the side.
