Ingredients

Quantities are for one portion.

  • 50 gpork belly slice
  • 30 gchouriço (portuguese sausage)
  • 10 mlolive oil
  • 100 gstewing beef, large chunks
  • salt to taste
  • 150 gpotatoes, peeled and halved
  • 50 gcabbage, cut into wedges
  • 1carrot, peeled and halved
  • 1turnip, peeled and quartered
  • 10 gfresh parsley

Method

  1. Place the stewing beef and pork belly in a large pot. Cover generously with water and add a pinch of salt.
  2. Bring to a boil, then lower the heat. Skim any foam from the surface. Simmer slowly for over an hour until the meat begins to turn tender.
  3. Add the chouriço sausage, the turnip, and the carrot to the pot. Cook for twenty minutes.
  4. Add the potato halves and cabbage wedges, ensuring they are submerged in the rich broth.
  5. Simmer until the potatoes are soft and the cabbage is cooked but holds its shape.
  6. Remove the meats and slice them. Arrange the sliced meats, root vegetables, and cabbage on a large platter.
  7. Drizzle the dish with the olive oil, scatter over the chopped parsley, and serve hot, perhaps with a cup of the savory cooking broth on the side.
