Grilled Sardines with Potatoes and Salad
The quintessential Portuguese summer meal featuring smoky, charred whole sardines served simply with boiled potatoes and a crisp salad.
Ingredients
Quantities are for one portion.
- 1lemon, cut into wedges
- 10 mlolive oil
- 1onion, thinly sliced
- 50 glettuce leaves
- 150 gpotatoes, unpeeled
- 0.5tomato, sliced
- coarse salt to taste
- 150 gwhole sardines, cleaned
- 10 gfresh parsley, chopped
Method
- Boil the unpeeled potatoes in salted water until a knife pierces them easily. Keep them warm.
- Coat the whole sardines in coarse salt and let them sit for a few minutes.
- Heat an outdoor grill or a heavy grill pan over high heat. Arrange the sardines flat.
- Grill the sardines without moving them until the skin is blistered and charred, then flip carefully and char the other side until fully cooked.
- Prepare a simple side salad by tossing the lettuce, sliced tomato, thinly sliced onion, and chopped parsley together.
- Drizzle the boiled potatoes and the salad with the olive oil.
- Serve the charred, salty sardines alongside the hot potatoes, fresh salad, and a wedge of lemon.
