Caldeirada de Peixe
A robust, layered fisherman's stew simmering firm white fish, sliced potatoes, peppers, and tomatoes in white wine.
Ingredients
Quantities are for one portion.
- 1green bell pepper, sliced
- 50 mlwhite wine
- 150 gfirm white fish (cod or hake)
- 10 mlolive oil
- salt and pepper to taste
- 1onion, thinly sliced
- 50 gcanned diced tomatoes
- 150 gpotatoes, peeled and sliced into thick rounds
- 1garlic clove, crushed
Method
- Select a pot with a tight-fitting lid. Drizzle the olive oil across the bottom.
- Arrange half the sliced onion, half the green bell pepper, and the crushed garlic in the bottom of the pot.
- Place an even layer of the sliced potatoes over the vegetables.
- Lay the white fish fillet on top of the potatoes. Season with salt and pepper.
- Cover the fish with the remaining sliced onion and green pepper. Pour the canned diced tomatoes and the white wine over the top.
- Bring the pot to a simmer over medium heat. Cover tightly and reduce the heat to low.
- Simmer gently without stirring for thirty minutes, until the potatoes are tender and the fish flakes easily. Serve in a deep bowl with the broth.
