Taktouka with Fried Eggs and Bread
A smoky, cooked salad of roasted green peppers and tomatoes infused with cumin, served warm with fried eggs and crusty bread.
Ingredients
Quantities are for one portion.
- 1green bell pepper, roasted and peeled
- 15 mlolive oil
- salt and pepper to taste
- 1onion, finely diced
- 1 tspcumin
- 150 gcanned diced tomatoes
- 2eggs
- 2garlic cloves, crushed
- 1 tsppaprika
- 50 gmoroccan flatbread
Method
- Dice the roasted and peeled green bell pepper into small pieces.
- Heat the olive oil in a pan. Sauté the finely diced onion and crushed garlic until soft.
- Add the canned diced tomatoes, paprika, cumin, salt, and pepper. Simmer until the liquid reduces and the sauce thickens.
- Stir the chopped roasted pepper into the tomato sauce. Cook over low heat, mashing the mixture slightly with a spoon until it forms a unified, jam-like consistency.
- In a separate pan, fry the eggs until the whites are set but the yolks remain soft.
- Warm the flatbread in an oven or on a grill.
- Serve the warm, smoky taktouka topped with the fried eggs alongside the crusty bread.
