Salmon en Papillote with Potatoes

A fresh and light preparation where salmon, lemon, and courgette are baked together inside a parchment parcel, served with boiled potatoes.

Ingredients

Quantities are for one portion.

  • 1lemon, sliced
  • 10 mlwhite wine
  • 1courgette, sliced
  • 30 mlolive oil
  • 10 gfresh dill
  • salt and pepper to taste
  • 200 gpotatoes, sliced
  • 150 gsalmon fillet

Method

  1. Boil the potato slices in salted water until tender, then drain and keep warm.
  2. Preheat the oven. Lay out a large piece of baking parchment.
  3. Place the sliced courgette in the center of the parchment, then set the salmon fillet on top.
  4. Season the salmon with salt and pepper, top with the lemon slices and fresh dill.
  5. Drizzle the olive oil and white wine over the fish.
  6. Fold the parchment paper tightly to seal the fish inside a parcel. Bake on a tray until the salmon is cooked through.
  7. Open the parcel carefully and serve the fragrant salmon alongside the boiled potatoes.
