Steak Frites
The definitive French bistro meal consisting of a seared sirloin steak coated in butter, served with crisp oven-roasted fries.
Ingredients
Quantities are for one portion.
- 200 gsirloin steak
- 15 mlolive oil
- salt and pepper to taste
- 1sprig fresh thyme
- 10 gbutter
- 200 gpotatoes, cut into fries
- 1garlic clove, crushed
Method
- Preheat the oven. Toss the potato fries with half of the olive oil, salt, and pepper, then roast until crispy and golden.
- Season the steak generously with salt and pepper.
- Heat the remaining olive oil in a thick pan until very hot.
- Sear the steak on both sides to your preferred doneness.
- During the final minute of cooking, add the butter, crushed garlic, and fresh thyme to the pan, basting the steak with the foaming butter.
- Transfer the steak to a board and let it rest for several minutes.
- Slice the rested meat and serve alongside the hot oven fries.
