Rogan Josh with Basmati Rice
A classic Kashmiri dish of intensely savory lamb chunks slow-cooked in a robust, colored sauce flavored with warming spices.
Ingredients
Quantities are for one portion.
- 150 glamb shoulder, diced
- 15 mlolive oil
- 1onion, finely diced
- salt to taste
- 100 gcanned diced tomatoes
- 1 tspgaram masala
- 1 tspchili powder
- 70 gbasmati rice
- 2garlic cloves, minced
- 50 gplain yogurt
Method
- Heat the olive oil in a heavy pot. Sear the lamb chunks until browned on all sides, then remove and set aside.
- Sauté the diced onion and garlic in the hot oil until golden and soft.
- Stir in the garam masala and chili powder, cooking briefly until extremely fragrant.
- Return the lamb to the pot. Stir in the diced tomatoes and the plain yogurt.
- Bring the sauce to a gentle simmer, cover, and cook slowly until the lamb is tender and the sauce is rich and thick.
- Shortly before the lamb is ready, boil the dry basmati rice in salted water until fluffy.
- Serve the vibrant, aromatic lamb curry ladled over the hot basmati rice.
