Ingredients

  • 150 glamb shoulder, diced
  • 15 mlolive oil
  • 1onion, finely diced
  • salt to taste
  • 100 gcanned diced tomatoes
  • 1 tspgaram masala
  • 1 tspchili powder
  • 70 gbasmati rice
  • 2garlic cloves, minced
  • 50 gplain yogurt

Method

  1. Heat the olive oil in a heavy pot. Sear the lamb chunks until browned on all sides, then remove and set aside.
  2. Sauté the diced onion and garlic in the hot oil until golden and soft.
  3. Stir in the garam masala and chili powder, cooking briefly until extremely fragrant.
  4. Return the lamb to the pot. Stir in the diced tomatoes and the plain yogurt.
  5. Bring the sauce to a gentle simmer, cover, and cook slowly until the lamb is tender and the sauce is rich and thick.
  6. Shortly before the lamb is ready, boil the dry basmati rice in salted water until fluffy.
  7. Serve the vibrant, aromatic lamb curry ladled over the hot basmati rice.
