Navratan Korma with Garlic Naan
A luxurious, mildly sweet Indian curry made with mixed vegetables, paneer, and cashews, simmered in a rich cream sauce and served with warm naan.
Ingredients
Quantities are for one portion.
- 50 gpaneer, cubed
- 150 gmixed vegetables (carrots, peas, green beans)
- 100 mlvegetable stock
- 15 gcashew nuts
- 1 tbspvegetable oil
- 1 tspgaram masala
- 50 mlheavy cream
- 1garlic naan (store-bought)
Method
- Heat the vegetable oil in a pot over medium heat and lightly toast the cashew nuts until golden, then set aside.
- In the same pot, fry the paneer cubes until golden on all sides, then remove and set aside.
- Add the mixed vegetables to the pot and sauté for a few minutes. Stir in the garam masala and cook until fragrant.
- Pour in the vegetable stock and simmer until the vegetables are tender.
- Lower the heat, stir in the heavy cream, and return the paneer and cashews to the pot to warm through.
- Serve the creamy korma hot with the garlic naan on the side.
