Navratan Korma with Garlic Naan

Ingredients

Quantities are for one portion.

  • 50 gpaneer, cubed
  • 150 gmixed vegetables (carrots, peas, green beans)
  • 100 mlvegetable stock
  • 15 gcashew nuts
  • 1 tbspvegetable oil
  • 1 tspgaram masala
  • 50 mlheavy cream
  • 1garlic naan (store-bought)

Method

  1. Heat the vegetable oil in a pot over medium heat and lightly toast the cashew nuts until golden, then set aside.
  2. In the same pot, fry the paneer cubes until golden on all sides, then remove and set aside.
  3. Add the mixed vegetables to the pot and sauté for a few minutes. Stir in the garam masala and cook until fragrant.
  4. Pour in the vegetable stock and simmer until the vegetables are tender.
  5. Lower the heat, stir in the heavy cream, and return the paneer and cashews to the pot to warm through.
  6. Serve the creamy korma hot with the garlic naan on the side.
