Beef and Apricot Stew with Couscous

Ingredients

Quantities are for one portion.

  • 1 tspcinnamon
  • 30 gdried apricots, halved
  • 15 mlolive oil
  • 10 gflaked almonds
  • salt and pepper to taste
  • 1onion, sliced
  • 150 gstewing beef, cubed
  • 1 tspginger powder
  • 70 gdry couscous

Method

  1. Heat the olive oil in a heavy pot or tagine. Brown the cubed stewing beef on all sides.
  2. Add the sliced onion, ginger powder, cinnamon, salt, and pepper to the beef. Sauté until the onion is soft.
  3. Pour in enough water to cover the meat. Bring to a boil, then turn the heat down, cover, and simmer slowly for over an hour until the meat is very tender.
  4. Add the dried apricots to the pot. Simmer uncovered until the fruit swells and the sauce thickens into a syrup.
  5. Place the dry couscous in a bowl. Pour an equal volume of boiling water over it, cover tightly, and steam, then fluff with a fork.
  6. In a dry pan, toast the flaked almonds until golden brown.
  7. Serve the sweet and savory beef stew over the couscous and garnish with the toasted almonds.
