Beef and Apricot Stew with Couscous
A sweet and savory Moroccan stew where tender braised beef contrasts with plump dried apricots and aromatic cinnamon.
Ingredients
Quantities are for one portion.
- 1 tspcinnamon
- 30 gdried apricots, halved
- 15 mlolive oil
- 10 gflaked almonds
- salt and pepper to taste
- 1onion, sliced
- 150 gstewing beef, cubed
- 1 tspginger powder
- 70 gdry couscous
Method
- Heat the olive oil in a heavy pot or tagine. Brown the cubed stewing beef on all sides.
- Add the sliced onion, ginger powder, cinnamon, salt, and pepper to the beef. Sauté until the onion is soft.
- Pour in enough water to cover the meat. Bring to a boil, then turn the heat down, cover, and simmer slowly for over an hour until the meat is very tender.
- Add the dried apricots to the pot. Simmer uncovered until the fruit swells and the sauce thickens into a syrup.
- Place the dry couscous in a bowl. Pour an equal volume of boiling water over it, cover tightly, and steam, then fluff with a fork.
- In a dry pan, toast the flaked almonds until golden brown.
- Serve the sweet and savory beef stew over the couscous and garnish with the toasted almonds.
