Beef Tagine with Potatoes and Peas
A savory, thick stew of slow-braised beef chunks, soft yellow potatoes, and sweet green peas, steeped in ginger and turmeric.
Ingredients
Quantities are for one portion.
- 15 mlolive oil
- 50 gfrozen peas
- salt and pepper to taste
- 1onion, chopped
- 150 gstewing beef, cubed
- 50 gcanned diced tomatoes
- 200 gpotatoes, peeled and quartered
- 1 tspginger powder
- 1 tspturmeric
Method
- Heat the olive oil in a pot or tagine. Brown the cubed beef on all sides.
- Add the chopped onion to the pot, cooking until soft. Stir in the ginger, turmeric, salt, and pepper.
- Add the diced tomatoes and enough water to cover the beef.
- Bring to a boil, then cover and simmer over very low heat for over an hour until the beef is nearly tender.
- Nestle the quartered potatoes into the thick sauce around the beef. Pour in a splash more water if needed. Cover and cook until the potatoes are soft.
- Stir the frozen peas into the tagine and simmer uncovered for a few minutes until the sauce reduces and the peas are cooked.
- Serve the tagine hot directly from the pot.
