Beef Tagine with Potatoes and Peas

Ingredients

Quantities are for one portion.

  • 15 mlolive oil
  • 50 gfrozen peas
  • salt and pepper to taste
  • 1onion, chopped
  • 150 gstewing beef, cubed
  • 50 gcanned diced tomatoes
  • 200 gpotatoes, peeled and quartered
  • 1 tspginger powder
  • 1 tspturmeric

Method

  1. Heat the olive oil in a pot or tagine. Brown the cubed beef on all sides.
  2. Add the chopped onion to the pot, cooking until soft. Stir in the ginger, turmeric, salt, and pepper.
  3. Add the diced tomatoes and enough water to cover the beef.
  4. Bring to a boil, then cover and simmer over very low heat for over an hour until the beef is nearly tender.
  5. Nestle the quartered potatoes into the thick sauce around the beef. Pour in a splash more water if needed. Cover and cook until the potatoes are soft.
  6. Stir the frozen peas into the tagine and simmer uncovered for a few minutes until the sauce reduces and the peas are cooked.
  7. Serve the tagine hot directly from the pot.
