Ingredients

Quantities are for one portion.

  • 1onion, finely diced
  • 1 tbspvegetable oil
  • salt to taste
  • 100 gcanned diced tomatoes
  • 1 tspgaram masala
  • 1 tspchili powder
  • 70 gbasmati rice
  • 150 gchicken thighs, bone-in
  • 2garlic cloves, minced

Method

  1. Cook the dry basmati rice in salted water until soft and fragrant, then set aside.
  2. Season the chicken thighs directly with half of the chili powder and salt.
  3. Heat the vegetable oil in a heavy pot and sear the chicken efficiently on all sides until browned. Remove the chicken.
  4. Sauté the diced onion and garlic in the hot oil until caramelized.
  5. Stir in the remaining chili powder, garam masala, and canned diced tomatoes, cooking until fragrant and thick.
  6. Return the chicken to the pot. Cover and simmer gently until the chicken falls off the bone and the spicy gravy surrounds it entirely.
  7. Serve the fiery chicken curry with the cooling plain basmati rice.
