Andhra Chicken Curry with Rice
A notoriously fiery and strongly spiced regional Indian chicken curry carrying deep savory heat, balanced by neutral rice.
Ingredients
Quantities are for one portion.
- 1onion, finely diced
- 1 tbspvegetable oil
- salt to taste
- 100 gcanned diced tomatoes
- 1 tspgaram masala
- 1 tspchili powder
- 70 gbasmati rice
- 150 gchicken thighs, bone-in
- 2garlic cloves, minced
Method
- Cook the dry basmati rice in salted water until soft and fragrant, then set aside.
- Season the chicken thighs directly with half of the chili powder and salt.
- Heat the vegetable oil in a heavy pot and sear the chicken efficiently on all sides until browned. Remove the chicken.
- Sauté the diced onion and garlic in the hot oil until caramelized.
- Stir in the remaining chili powder, garam masala, and canned diced tomatoes, cooking until fragrant and thick.
- Return the chicken to the pot. Cover and simmer gently until the chicken falls off the bone and the spicy gravy surrounds it entirely.
- Serve the fiery chicken curry with the cooling plain basmati rice.
