Vegetarian Pierogi with Caramelized Onions
Handmade Polish dumplings filled with creamy mashed potatoes and farmer's cheese, boiled then pan-fried with sweet caramelized onions and a dollop of sour cream.
Ingredients
Quantities are for one portion.
- Pinch of salt and black pepper
- 30 gsour cream
- 60 gfarmer's cheese (or dry curd cottage cheese/ricotta)
- 1onion, thinly sliced
- 25 gbutter
- 150 gpotatoes, peeled and boiled
- 1egg
- 100 gplain flour
Method
- In a bowl, mix the plain flour, the egg, and a splash of warm water until a smooth, firm dough forms. Knead briefly, then cover and let it rest.
- Mash the boiled potatoes thoroughly and mix them with the farmer's cheese, seasoning generously with black pepper and salt to form the filling.
- Roll the rested dough out thinly on a floured surface and cut out circular wrappers using a glass or pastry cutter.
- Place a spoonful of the potato and cheese filling into the center of each circle, fold the dough over, and pinch the edges firmly to seal the dumplings.
- Boil the pierogi in a large pot of salted water; once they float to the surface, cook for one more minute, then remove with a slotted spoon.
- In a frying pan, melt the butter over medium heat and cook the sliced onion slowly until deeply caramelized and sweet.
- Add the boiled pierogi to the pan with the onions, frying them briefly until slightly crispy on the outside.
- Serve the warm dumplings smothered in the caramelized onions, with the sour cream on the side.
