Seco de Res with Beans and Rice

Ingredients

Quantities are for one portion.

  • 70 gdry white rice
  • salt and pepper to taste
  • 20 gfresh cilantro (coriander)
  • 1onion, finely diced
  • 150 gstewing beef, cubed
  • 1 tbspvegetable oil
  • 50 mldark beer
  • 1 tbspaji amarillo paste
  • 50 gcanned canary (or white) beans, rinsed

Method

  1. Heat the vegetable oil in a heavy pot. Sear the cubed beef on all sides until well browned. Remove from the pot.
  2. In the same pot, sauté the finely diced onion until brown and soft. Stir in the aji amarillo paste.
  3. In a blender, process the fresh cilantro with a tiny splash of water until smooth. Add the green puree to the pot.
  4. Return the beef to the pot. Pour the dark beer over the meat to deglaze the pan. Season with salt and pepper.
  5. Bring to a boil, then cover and simmer over low heat for over an hour until the beef is extremely tender and the cilantro sauce has thickened.
  6. Warm the rinsed canary beans in a small pot. Steam the white rice until fluffy.
  7. Surround a mound of rice with the hot beans, and ladle the rich, green beef stew generously over the plate.
