Seco de Res with Beans and Rice
A robust, hearty cilantro-based stew featuring slow-braised beef and peas, served with savory canary beans and fluffy white rice.
Ingredients
Quantities are for one portion.
- 70 gdry white rice
- salt and pepper to taste
- 20 gfresh cilantro (coriander)
- 1onion, finely diced
- 150 gstewing beef, cubed
- 1 tbspvegetable oil
- 50 mldark beer
- 1 tbspaji amarillo paste
- 50 gcanned canary (or white) beans, rinsed
Method
- Heat the vegetable oil in a heavy pot. Sear the cubed beef on all sides until well browned. Remove from the pot.
- In the same pot, sauté the finely diced onion until brown and soft. Stir in the aji amarillo paste.
- In a blender, process the fresh cilantro with a tiny splash of water until smooth. Add the green puree to the pot.
- Return the beef to the pot. Pour the dark beer over the meat to deglaze the pan. Season with salt and pepper.
- Bring to a boil, then cover and simmer over low heat for over an hour until the beef is extremely tender and the cilantro sauce has thickened.
- Warm the rinsed canary beans in a small pot. Steam the white rice until fluffy.
- Surround a mound of rice with the hot beans, and ladle the rich, green beef stew generously over the plate.
