Pad Ka Prao
A fiery, savory Thai stir-fry loaded with minced pork and fragrant fresh basil, topped traditionally with a crispy fried egg.
Ingredients
Quantities are for one portion.
- salt and pepper to taste
- 1onion, diced
- 70 gwhite rice
- 1 tbspvegetable oil
- 1egg
- 150 gpork mince
- 15 mlsoy sauce
- 2garlic cloves, minced
- 10 gfresh thai basil leaves
Method
- Cook the dry white rice in salted water until fluffy. Set aside.
- Heat half the vegetable oil in a pan. Fry the egg until the edges are crisp and the yolk is cooked. Remove and set aside.
- In the remaining oil, sauté the diced onion and minced garlic until fragrant.
- Add the pork mince. Stir-fry over high heat until browned.
- Pour the soy sauce into the pan. Stir well.
- Toss the fresh basil leaves into the hot pork. Cook briefly until the leaves wilt.
- Serve the spicy pork mince over the white rice. Top with the crispy fried egg.
