Ingredients

Quantities are for one portion.

  • 1 tbspgluten-free soy sauce (or tamari)
  • 50 gchinese sausage (lạp xưởng), diced
  • 20 gmixed frozen peas and diced carrots
  • 1 tbspvegetable oil
  • 1egg
  • 70 gdry jasmine rice
  • 1garlic clove, minced
  • 50 graw prawns, diced

Method

  1. Steam the jasmine rice ahead of time. Spread it onto a flat tray and cool it so the grains dry out and separate.
  2. Heat the vegetable oil in a large wok over high heat. Fry the diced Chinese sausage until the thick, sweet red oil renders out.
  3. Add the diced prawns, minced garlic, and the frozen peas and carrots to the wok. Sauté until the prawns turn pink.
  4. Push the ingredients to the side of the wok. Crack the egg into the oil and scramble it rapidly.
  5. Dump the cold, dry jasmine rice into the wok.
  6. Toss the rice over the high heat, mixing the egg, meat, and vegetables through the grains.
  7. Pour the gluten-free soy sauce around the rim of the hot wok to sizzle, then toss the rice to coat it evenly. Serve the fragrant, colorful fried rice hot.
