Bistec a lo Pobre
A hearty, unpretentious feast of seared steak surrounded by an abundance of sides: fried plantain, fries, a fried egg, and rice.
Ingredients
Quantities are for one portion.
- 50 gdry white rice
- salt and pepper to taste
- 1ripe plantain (approx 50g), sliced in half lengthwise
- 1 tbspvegetable oil
- 100 gpotatoes, cut into fries
- 1egg
- 150 gbeef sirloin steak, pounded flat
- 15 mlsoy sauce
Method
- Rinse and steam the white rice until fluffy. Keep warm.
- Toss the potato fries in a drop of oil and a pinch of salt. Roast or fry until golden and crispy.
- Heat the remaining vegetable oil in a wide pan. Fry the sweet plantain halves until dark and caramelized on both sides. Remove and set aside.
- In the same pan, fry the egg until the white is just set and the yolk is still runny. Remove and set aside.
- Season the flattened beef sirloin with salt, pepper, and a splash of soy sauce.
- Sear the beef quickly in the hot pan until browned but still tender inside.
- Arrange the expansive meal on a large plate: mound the rice, stack the crispy fries, fan out the sweet plantains, lay down the steak, and drape the fried egg over the meat.
